Turkey Meatballs with Marinara

For the Meatballs:

  • 2 pounds ground turkey
  • 2 egg
  • 1/2 cup almond flour
  • 1 tbsp oregano
  • 1 tbsp onion powder
  • 4 cloves garlic
  • 1/2 cup yellow onion, finely chopped
  • 2 tbsp crushed red pepper flakes
  • 4 tbsp basil, finely chopped
  • 1 tbsp paprika

For the Sauce

  • 1 jar no sugar added organic marinara sauce
  • 1 tbsp nutritional yeast
  • 1 medium zucchini, finely grated
  • 2 medium carrots, finely grated

  1. Preheat the oven to 375°F.
  2. In a large mixing bowl, combine the ground turkey, eggs, almond flour, oregano, onion powder, garlic, yellow onion, crushed red pepper flakes, basil, paprika, salt, and pepper.
  3. Mix everything together until well combined.
  4. Form the mixture into meatballs, about 2 inches in diameter.
  5. Place the meatballs on a baking sheet lined with parchment paper.
  6. Bake the meatballs for 20-25 minutes or until fully cooked and browned on the outside.
  7. While the meatballs are cooking, grate the zucchini and carrots using a hand grater or food processor.
  8. Place marinara sauce in a large sauce pan and warm over medium heat. Stir in grated veggies and warm through.
  9. Place turkey meatballs in a bowl, cover in marinara, and season with salt, pepper, and more chopped basil. We love serving this over roasted spaghetti squash.

This makes a double batch- great for leftovers throughout the week or freeze for an easy meal later on.
