Curry Chicken Salad



  • 1 lb cooked and shredded chicken breast
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/4 cup chopped almonds or cashews
  • 1/4 cup shredded carrot
  • 2 tbsp dried unsweetened currants or cranberries
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup avocado oil mayonnaise
  • 1/4 cup full fat plain Greek yogurt
  • 3 tbsp curry powder
  • 1 tsp chili power
  • 1 tbsp lemon juice
  • Salt and pepper to taste


  1. In a large mixing bowl, whisk together the mayonnaise, Greek yogurt, curry powder, lemon juice, salt, and pepper until smooth.
  2. Add the shredded chicken, celery, red onion, nuts, carrot, and cilantro to the bowl and toss to coat evenly with the curry dressing.
  3. Taste and adjust seasoning as needed.
  4. Serve as is with flackers, or wrap in lettuce leaves


  • Chili powder is optional- feel free to leave out to decrease the spice
