Chopped Avocado Chicken Salad



  • 2 cups cooked chicken, diced
  • 2 avocados, peeled and diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper, to taste

Optional add-ins:

  • 1/2 red onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup mango, diced
  • 1/2 black beans
  • Smoked paprika
  • Cumin to taste


  1. In a large bowl, combine the chopped chicken, avocado, and cilantro.
  2. Squeeze the lime juice over the salad and toss to combine. Add more if needed to minimize browning. (This happens over time in storage and it’s totally fine- just not as pretty)
  3. Add any optional add-ins. My favorites are red onion and mango with cumin.
  4. Season with salt and pepper to taste. Enjoy on a bed of greens or on it’s own!!
  5. Serve immediately or refrigerate until ready to serve.


  • This recipe is great for using up any leftover roast or rotisserie chicken and keeps well for lunches or snacks through the week.
