Black and Blue Salad

  • 1 lb flank steak
  • Salt and pepper
  • 1 tbsp olive oil
  • 6-8 cups mixed greens
  • 1/2 cup crumbled blue cheese
  • 1/2 cup blackberries
  • 1/4 cup sliced almonds
  • 1/4 cup red onion, sliced thinly
  • 1/4 cup balsamic vinaigrette

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season the flank steak with salt and pepper to taste.
  3. Drizzle the olive oil over the steak and rub it in.
  4. Place the steak on the grill or grill pan and cook for 5-7 minutes on each side, or until it reaches your desired level of doneness.
  5. Remove the steak from the grill or grill pan and let it rest for 5-10 minutes before slicing it thinly against the grain.
  6. Meanwhile, rinse the mixed greens in cold water and dry them with paper towels or a salad spinner.
  7. Place the mixed greens in a large salad bowl and sprinkle the crumbled blue cheese on top.
  8. Add the blackberries, sliced almonds, and red onion to the bowl.
  9. Drizzle the balsamic vinaigrette over the salad and toss gently to combine.
  10. Add the sliced steak to the top of the salad.
  11. Season with additional salt and pepper to taste.
