Avocado, Radicchio and Endive Salad

Wanting to mix up your salads? Try radicchio and endives, they are high in fiber and antioxidant rich!



Serving = 2 servings


  • 3 endives
  • 1 radicchio
  • 2 avocados
  • 1/2 cup shaved Parmesan cheese


  • 1 avocado
  • 1/4 cup fresh lemon juice
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/4 cup olive oil
  • 2 tbsp fresh basil
  • 1 tsp dijon mustard
  • 3 cloves minced garlic
  • water


  1. Chop endives, radicchio and 2 avocados in 1” cubes. Add all to a bowl breaking up the endives as you go.
  2. Add all dressing ingredients to blender and pulse until smooth. Add water to reach your desired consistency.
  3. Drizzle dressing over the salad and mix to coat. Finish with shaved Parmesan cheese.


  • Serve with grilled shrimp or grilled chicken for a hearty meal.
